List supported chains and tokens

Returns all chains supported by the deposit service, with their tokens and whether they support deposits, bridging destinations, or both. deposit reflects live operator pauses: a chain whose deposits are currently paused reports deposit: false while keeping its destination and refund capabilities, which a pause does not affect. A paused chain is never omitted — absence would mean the chain is not supported at all, which is a different and more permanent claim.
